COOKING CLASSES

If you have never had an African food, then now is your chance to try! and if you had it before, then you already know how flavorful it is!  African food is all about flavor and taste.  

 

Throughout the continent East,West, Southern North, and Central and don't forget Madagascar, and also depending on a region all have their own variation of native traditional African dishes and preparation techniques. In some of our cuisine, we also have Arabic, Indian and colonial influences.  

 

In the West and Central region  you will eat the most delicious Vegan and vegetarian dishes! And for all you Paleo lovers!  Most of our traditional dishes are paleo, I mean I didn't know it was paleo until recently.  That is just what we eat and they way we have been cooking since generations.  And not to forget gluten-free, we have dishes for you as well!

The meat is mostly beef, goat, sheep, chicken, seafood guinea fowl, game meat and some occasionally pork.  Most Africans don't like or eat pork.  The West and Central cooking oil is Palm fruit oil, coconut oil and peanut oil.  

 

In the West and Central region  you will eat the most delicious Vegan and vegetarian dishes! And for all you Paleo lovers!  Most of our traditional dishes are paleo, I mean I didn't know it was paleo until recently.  That is just what we eat and they way we have been cooking since generations.  And not to forget gluten-free, we have dishes for you as well!

 

The roots of North African cuisine dated back to north Africa empire date back to antiquity.  Along the way, couscous, olive oil, was introduced before the Romans and the 7th century the Arabs brought  saffron, nutmeg, spices and etc.  And you may say the Arab took over North Africa.  You will see Arab influences in most of North African dishes and culture.

 

Southern African cuisine or as it is known as rainbow cuisine.  The region and dishes is a blend of various Southern African native people, European and Asian.  You will enjoy dishes like Potjiekos, traditional Afrikaner meat and vegetables stew.  Impala seafood dish includes Crayfish, oysters, mackerel, lobsters, mussels tuna and prawns and many fantastic dishes that include Malagasy cuisine from Madagascar.

 

I will also be cooking some fantastic dishes from the Horn Of Africa.  Ethiopian cuisine that  some of you are probably familia with.  Africa is a large continent, and from my point of view and taste, have the most tasty delicious eclectic flavorful cuisine in the world.  Oh well, I am an African what can I say!

 

I must say, as much as I love African food, I am also into health and fitness.  No GMO for me! Unless I didn't know it was GMO.  I am into healthy food and cooking organic and natural grown ingredient.  I cook everything from scratch and fresh cooking except I like sardine Titus from the can, don't ask me why I am addicted!

VOLTA
PALEO, GLUTENFREE

FUFU, Foofoo, Fufuo, Foufou is a staple West African Ghanaian dish.  It has variants names, it depends on which regions of Ghana you come from.  

 

Traditionally, Fufu is eaten with palm fruit soup, tomato pepper light soup, peanut butter soup or green cocoyam leaf soup.  But you can eat it with any soup you prefer. 

 

My favorites with seafood light soup.  It could be dried or fresh fish.  It is among my top 10 favorite Ghanaian dishes of all time.  Maybe even number 1.  Oh! if only I could decide between the other 9.  Oh well, that is not soo important.  The best part is that they are all delicious!   This dish is also Paleo and Gluten free.

Someone is happy to see that wild caught Red Snapper.  I am sure by the look on my face that there is no need to tell you how much I love fish.  And this snapper was a beauty!  I couldn't wait to put it in the pot!

Pounding Fufu have always been a labor of love and a lot of sweat.  Traditionally Fufu is made by boiling and pounding Cassava - yoca - yucca or African yams into a sticky starchy dough form consistency.  The yams not to be confused with sweet potatoes! 

 

You may pound just the yams or cassava by it self or into two mixtures.  Green-plantain or malenga roots.  This days most people just cook with the flour fufu.  My sister Belinda said it is even better than the traditional way.  I am sorry sis! even though I also love the flour Fufu, I believe the traditional way is the best! but I will let you decide that for yourself.  This dish also comes with 3 sides.  Come over to my house and I will show you how to make this dish and more!

Mpotompoto-Baba that's what we called this mashed dish from Ghana.  It could be made with African yams, Taro roots, cassava roots or malanga roots.  I love all the roots but I must admit with the yams are my favorite.
